Grandma’s sauce
We'll cook the sauce
the way my grandmother
used to make it!

Meat or vegetarian, depending on the season
and who’s taking part.
What you'll learn
with your hands.
The basic technique for rolling out the dough to just the right thickness, every grain reacts differently, every hand finds its own rhythm.
The traditional Sicilian tool for shaping maccheroni al ferretto, an ancient gesture that can only be learned by feeling it in your hands.
Precision and rhythm to make tagliatelle, pappardelle, maltagliati, different shapes, same dough, changing flavors.
You’ll learn to work with ancient Sicilian grains, Timilia, Russello, Perciasacchi, by hand, unhurried, the way it used to be done.

How the day
unfolds.
Arrival at the space, introduction to the ingredients and ancient grains we’ll be using.
We begin: we knead together, talking about flours, water, resting time.
Rolling pin, ferretto, pasta cutter. Everyone finds their favorite technique.
We prepare the seasonal condiment, meat or vegetarian, the way grandma used to make it for family Sundays.
We taste together what we’ve made. In the same space, in a relaxed, private setting.
Before saying goodbye, you take home the recipe book with all the morning’s recipes, to recreate them whenever you like.
