Metod:
Step by step
Clean the sardines, removing the heads and innards. Open them flat and remove the backbone, leaving the lateral bones intact. Rinse well and dry gently. Place in a container and pour over the vinegar.

Mix the breadcrumbs, grated Piacentino, pine nuts, finely chopped garlic, soaked and squeezed raisins, chopped capers, parsley, salt and pepper in a bowl. Beat two eggs, add to the breadcrumb mixture and combine well with plenty of olive oil.
Drain the sardines, spread the filling over the opened fish, then gently cover each with another sardine, pressing lightly together.

Beat the remaining egg on a plate. Dip the stuffed sardines first in the egg, then in the Perciasacchi flour.
Heat plenty of olive oil in a large frying pan. When hot, fry the sarde a beccafico until golden.

Serve hot or at room temperature, with vegetables or a simple salad.

FEDERICA’S TIPS
Pat the sardines dry before filling them, and use just enough stuffing to close them comfortably. Taste the filling before adding salt: capers and cheese already bring plenty of savoury flavour.
