Metod:
Step by step
A few hours before starting, take the butter and eggs out of the refrigerator and bring to room temperature.
Break up the chocolate, cube the softened butter and melt together in a bain-marie. Allow to cool slightly.

Peel the orange zest without the white pith. Grind with the sugar in the Bimby for 20 seconds at speed 10.
Alternatively, use icing sugar and finely grate the orange zest.
Sift the flour with the baking powder.
Separate the eggs. Add a pinch of salt to the whites and set aside.
Add the orange sugar to the yolks, or the icing sugar and grated zest. Beat with an electric whisk until pale and fluffy, for at least 10 minutes.
Add the flour in two or three batches, stirring with a spoon.
Add the butter and chocolate mixture, continuing to stir with the spoon.

With a clean whisk, beat the egg whites to stiff peaks.
Gently fold the whites into the batter from the bottom upwards until evenly incorporated. Work slowly until there are no lumps.

Line a 22 cm cake tin and pour in the batter.
Bake in a fan oven at 175°C for 30 minutes.
Let cool and remove from the tin. Dust with icing sugar, or cocoa and cinnamon.

FEDERICA’S TIPS
Let the melted chocolate and butter cool slightly before combining them with the eggs. Check the cake towards the end of baking and avoid drying it out: a few moist crumbs on the skewer are welcome, but liquid batter needs more time.
