Etna Blackberry Jam

Etna blackberries are among the most precious treasures of Sicilian food tradition. Growing in mineral-rich volcanic soil on the slopes of Europe’s most active volcano, these wild berries develop a distinctive, intense flavour that makes them perfect for a truly unmistakable jam.

An Irresistible Traditional Sicilian Recipe

Etna blackberry jam is more than a preserve: it is a concentration of place and tradition. Volcanic soil gives these berries a natural sweetness balanced by lightly tangy notes, while the contrast between daytime and night-time temperatures typical of Etna’s mountain areas intensifies their natural aromas.

Etna blackberries are rich in antioxidants, vitamin C and anthocyanins, which give them their characteristic deep purple colour and provide numerous health benefits. Picking them in summer, between July and September, ensures the best flavour and aroma.

The Sicilian Tradition of Preserving

In Sicily, making blackberry jam follows recipes handed down through generations. Etna’s grandmothers knew exactly how to bring out the natural flavour of these wild fruits, using slow cooking techniques to preserve colour, fragrance and nutritional properties.

The recipe I share today honours that tradition, using only wholesome, natural ingredients. No artificial pectin or chemical preservatives: just fresh Etna blackberries, sugar and a squeeze of lemon to keep the colour vibrant.

How to Use Etna Blackberry Jam

This Sicilian blackberry preserve is incredibly versatile. Perfect spread on toast for a wholesome breakfast, it pairs beautifully with mature cheeses for an elegant aperitif. It can enrich traditional Sicilian tarts and cakes or form the base for ice creams and sorbets.

More adventurous cooks can also use it in savoury dishes, alongside roast meat or game, following Sicily’s ancient sweet-and-sour tradition.

ingredients

what’s
needed.

1 kg
Fresh Etna blackberries
300 g
Granulated sugar
1
Organic lemon
preparation

Metod:

Step by step

00
Prepare the blackberries

Wash thoroughly in plenty of running water, removing stalks and impurities. Place in a colander and let them dry completely so any remaining water does not dilute the jam.

01
Start cooking

Place the blackberries in a large, deep saucepan, preferably stainless steel, and add the sugar, lemon juice and finely grated zest. Stir gently with a wooden spoon to combine.

Cook over a moderate heat, stirring frequently to prevent sticking. This is essential for even cooking.

02
Remove the seeds

When the berries come to the boil, ladle them gradually into a food mill with a fine disc. This separates the pulp and juice from the small seeds, giving a smooth, velvety jam.

03
Finish cooking

Return the strained jam to the same pan, first rinsing it with water to remove any remaining seeds. Cook over a low heat for about 45 minutes, stirring often to prevent sticking.

04
Check the consistency

Use the traditional cold-plate test: place a drop of jam on a cold saucer. If it does not run when you tilt the saucer, the consistency is perfect.

05
Fill the jars

Immediately pour the boiling jam into previously sterilised glass jars. Seal tightly with new lids and turn the jars upside down to create a vacuum. Once completely cool, your Etna blackberry jam is ready to enjoy.

FEDERICA’S TIPS

Homemade Etna blackberry jam keeps in the pantry for up to 12 months. Once opened, refrigerate and use within 3–4 weeks. The secret to this traditional recipe is slow cooking and careful removal of the seeds, which ensure a perfect texture and intense flavour capturing the essence of Etna.

If you are lucky enough to be near Etna during blackberry season, pick them early in the morning while still fresh with dew. Avoid overripe or damaged fruit, and eat it or turn it into jam within 24 hours to preserve its qualities.
