The Secret to an Enchanting Pesto: Federica Genovese Sicily&Food Quality
Making Linguine with Lemon Pesto is an act of love for good food. At the heart of the recipe is, of course, the pesto: a lively, beautifully fragrant sauce that departs from the classics with citrus and Mediterranean notes.
Here is what you need for 4 people, for a dish where ingredient quality makes all the difference:

what’s
needed.
the perfect base. Made with 100% Sicilian wheat, my linguine absorb the sauce beautifully while retaining an exceptional bite and authentic flavour.
Organic, untreated lemons are essential, as we use both their fragrant zest and fresh juice for a bright, tangy note.
My sweet, crisp almonds, with their unrivalled flavour, give the pesto a velvety texture and gentle taste that balances the lemon’s acidity.
If you enjoy a stronger, more aromatic touch, a little garlic can make all the difference.
With its intense fruitiness and peppery notes, my oil brings all the ingredients together in perfect harmony.
For extra savouriness and irresistible creaminess.
Metod:
Simple Preparation, Extraordinary Results
place the almonds, lemon zest and juice, fresh basil, parsley, ½ garlic clove (if using), Parmigiano Reggiano, extra virgin olive oil, a pinch of salt and a grind of black pepper in a food processor or blender.
Process until creamy and evenly combined, but not completely smooth. Retaining a little texture makes it more interesting on the palate. Taste and adjust the salt or pepper if needed.
Bring a large pan of salted water to the boil. Add the Federica Genovese Sicily&Food Sicilian Wheat Linguine and cook according to the pack instructions until al dente.
Before draining, reserve a ladleful of cooking water. Drain the linguine and transfer straight to a large frying pan or serving bowl. Add the lemon pesto and a little of the reserved water.
Toss the pasta thoroughly with the pesto until the sauce coats the linguine evenly and becomes creamy. Garnish with fresh basil leaves and serve immediately.
